Zucchini Bread

3 eggs

1/2 cup oil and 1/2 cup applesauce

2 cups sucanat sugar

3 tsp vanilla

3 cups whole wheat pastry flour

1 tsp salt

2 cups zucchini, grated

1 tsp baking soda

1 Tbsp cinnamon

1/4 tsp baking powder

1/4 cup chopped nuts

Beat eggs until foamy.  Add oil, sugar, zucchini, and vanilla.  Mix lightly, but well.  Sift together flour, salt, soda, cinnamon and baking powder.  Add to egg and oil mixture.  Mix well. stir in nuts (optional).   Bake at 325 for 1 hour.

I do not do this, but for a crunchy topping:  Mix 1 cup brown sugar, 1 cup all purpose flour, 2 tbsp butter, 2 tsp cinnamon, and 1/2 cup walnuts.  Mix it all together really well and crumble on top of batter prior to baking.  The topping cooks crisp.
