Chicken Chow Mein

I wish I could remember where I got this recipe.  I think it was at

You can use whatever vegetables you’d like:

1  onion

2-3  carrots (your preference)

1-2 bell peppers

10 oz. spaghetti (thin)

1/4 cup or more soy sauce

1 tbsp fish sauce (optional)

1/2 tsp red pepper flakes

cooked chicken (as much as you want) (you could cook while veggies and spaghetti are cooking)

a small wedge of red cabbage and a small wedge of green cabbage ( I used one small head of cabbage from our garden)

Use as many veggies as you wish…mushrooms and celery would be good too.

Chop and slice your vegetables.

In a large pot or pan, begin cooking veggies in a little olive oil or oil of your choosing.  I covered with a lid to smother the cabbage, then finished cooking with the lid off.

Bring a pot of water to a boil and cook spaghetti according to box directions, while veggies are cooking.

Add cooked noodles and spices to veggies.  Add chicken.
