2lbs. ground beef
2 onions, chopped
2 clove garlic, minced
2 green peppers, chopped
28 oz. pinto beans, no salt added, drained/rinsed (I cook a couple of pounds of beans and some in the freezer) or you could use canned
56 oz diced tomatoes, no salt
2 tsp oregano
1 tsp cumin
1 tsp black pepper
1 tsp cayenne pepper
REAL salt, to taste
- Brown ground beef in large pot with onion, garlic, and green pepper. Drain if needed (I use grassfed beef, so I never have to drain).
- Add spices and beans. Stir together for 1 minute
- Add tomatoes and bring to a boil. Lower heat and simmer on low for 10 to 15 minutes, stirring occasionally.
You can up the cayenne or decrease to make it according to your heat tolerance.
